Here’s an easy family breakfast smoothie
Today was a crazy morning! The dogs had a vet appointment, Dallin and I have dentist appointments later today, we edited a podcast, posted a vlog…and I wrote this little post.
I jumped into the shower after I got home from the vet, and came out to this smoothie. While I was showering, my angel husband crafted this little recipe and, if I could be so bold, created a pineapple, coconut, and spinach masterpiece.

I want these posts to be more than recipes. I love cooking and making meals for my family…and, sometimes, I will have my own recipes that I’ve written (sometimes), or family heirloom recipes, and I’ll probably steal a lot from my grandma too, but mostly I want this blog to be a place where I can share my favorites! My favorite moments…and meals, and photos. SO…there will always be pictures, and I’ll always be here telling you all about it, but I want the focus to be on our family…and not on all the steps and directions (because I don’t think that’s fun to write about…and I’m not a master chef). Don’t worry, there will always be a recipe, just not all the pictures of me stirring, and adding things, and baking everything to perfection 😀
So, this is what we had for breakfast!
James is going through a popsicle loving phase…and if I was a more concerned mother I would make her homemade popsicles filled with chia seeds and all the blessings of Mother Nature… but I’m not :) We use the popsicle as a starter…an introduction, if you will, to her delicious meal of one slice of cheese (Tillamook cheese, the classiest of cheeses) and one pina colada spinach smoothie.
Here’s the Recipe!
Green Pina Colada Breakfast Smoothie
2 handfuls of ice…although I never measure. Just hold your blender cup under the ice dispenser until you feel right.
1.5 cups frozen pineapple chunks…or 1 can of pineapple (the canned way is delicious because you get all the pineapple juice!)
1/2 cup vanilla yogurt (greek yogurt works too…just not as yummy…but more healthy)
1/2 cup lite coconut milk (canned)…or do what we did today and use pina colada cocktail mix…IT WAS SO GOOD…and not that healthy…but so good. Or do both…smoothies are fun, because it’s really hard to mess them up.
1/4 cup unsweetened coconut (this is not a liquid…it’s a flake)
1 handful spinach…we do a big handful
Feel free to add a little handful of macadamia nuts, some chia seed, a bananna, or some strawberries (They would all be good).
Ok, in my opinion every smoothie is different and every smoothie needs a different amount of liquid to blend right (especially when you’re not using exact measurements like me…I don’t have time for that). So, if you’e blender is having a hard time mixing just add some milk or almond milk and all will be right with the world.
Here’s the cocktail sauce we used. It was left over from a few nights ago when Dallin made a dip for some coconut shrimp.
The other side of my fridge…anyone else love Sprite Zero, Costco jam and and syrup!
James calls these blankets here “night nights.” She brings them to breakfast everyday…and then Dash snuggles with them under her high chair.
Dash is very….VERY sweet❤️
And so is James!
Until she rubs her popsicle all over the fridge.
