Our Favorite Easy and Healthy Family Breakfast

I’m a sucker for warm breakfast food and this is one of my favorites. Before kids, I would just make a huge pan of this and eat it for breakfast and lunch for a week. Then I had kids and stopped doing that…turns out my kids naturally like only chicken nuggets, cheese, smoothies, plain quesadillas, and orange juice…fast forward two years, I now hate these foods with a passion, and we’re back to making what I like :)

Real quick, let me give you a history of this recipe…because, shocker, I did not completely make it up. I’ve changed it a lot. Around 20 years ago, my family lived in American Fork, Utah. My mom had a friend down the street who was really healthy and had put together a cookbook that featured whole grains and no refined sugars. A few years later, my mom is looking for a new recipe, finds this one for baked oatmeal, tries it out, WE LOVE IT, and now, we all make it all the time. It’s easy, healthy, amazing fresh out of the oven, and amazing for the rest of the week.

THE BEST BAKED OATMEAL RECIPE

Baked Oatmeal

Ingredients:

-1/4 cup butter

-1/2 cup applesauce

-2/3 cup honey

-4 eggs

-2tsp salt

-5 cups oatmeal

-1/2 cup hemp seed

-1/4 cup ground flax seed

-1/2 cup unsweetened coconut

-3 cups milk

-2 TBSP Baking Powder

-1 tsp cinnamon

-1 handful raisins or craisins

Directions :)

  • Step 1…Preheat your oven to 375

  • Step 2…Mix everything together except the oatmeal and baking powder.

  • Step 3…Mix in the oatmeal and baking powder.

  • Step 4…Add chocolate chips if you want to be less healthy, but more happy.

  • Step 5…Nuts are allowed if you’re that kind of person. I am not though.

  • Step 6…Dump ingredients into a 9x13 casserole dish. It’s going to be full (this is a doubled recipe).

  • Step 7…Bake for 40 minutes, check if its golden brown on top. If it’s not, bake another 10-20 minutes. One time I forgot and left our baked oatmeal in the oven for almost two hours and it was still great (just a little bit more like granola), so don’t stress. If you want it crispier, you can split the mixture into two 9x13 dishes as well.

  • Step 8…Scoop a big piece in your bowl, add as much milk as you want and dive in.

  • Step 9…If you like it hot, the milk can cool things down, so just pop it in the microwave for a few seconds.

If you’re like James, you’re beautiful, and you love peaches. It’s peach season now in Utah and these Lemon Elbertas were so, sooooooo good on top of our baked oatmeal.

HEALTHY BREAKFAST FOR KIDS

Breakfast at our house looks like James determined to eat at the table and not in her high chair, George beginning his first hunger strike of the day, and me, holding strong on the no tv til the moon comes out rule, but having a lot of regrets about that decision all ready. But then James at a whole bowl, and, I don’t know why, but when they eat the food I cook, I just feel loved. So, it was a good morning ❤️🌴🍁
